Oven Roasted Vegetables

 

  1. Preheat the oven to 400 degrees F 
  2. Cut vegetables into pieces that are uniform in size.
  3. Mix olive oil and Italian seasoning, salt, onion, and garlic powder in a large bowl until combined.
  4. Add vegetables to the bowl and mix until well-coated.
  5. Grease a baking sheet with cooking spray.
  6. Spread vegetables evenly onto the prepared baking sheet.
  7. Roast in the preheated oven until vegetables are tender, 20 to 30 minutes.
  8. Serve hot.
